Savoury Oat Nut Vegetable Cake - Dinah from New York

Ingredients:

4 oz sweet onions chopped
3 oz extra virgin olive oil
2 carrots shredded
15 oz shredded English Cheddar Cheese
12 oz walnuts
8 oz Irish Oatmeal Flakes (not instant)
2 tsp Marmite (English veg. paste)
4 eggs

Cooking Instructions:

Sweat the onions and shredded carrots until soft. Add walnuts until slightly brown. Place in large bowl, and add oat flakes and shredded cheese. Stir and add Marmite and 4 eggs slightly whisked. 

Press into 9x13 pan and bake in 350 degree oven until brown and firm (about 40-45 minutes) Don't overcook. Cut in 3" squares.

Memorable Moment:

My Auntie Brenda made this in England when I lived with her. It was a favorite of my sons, and we often had it after a long day of fox hunting. I make it in the winter, and it's wonderful hot or cold with HP sauce. It's healthy and filling. Good for a savoury snack.
