Grandma's Pineapple Cake - Pam from Georgia


Total Time: 15 minutes
Servings: 12

Ingredients:

1 box yellow cake mix
1 container of Cool Whip (medium size)
16 oz. crushed pineapple
1 box instant vanilla (or white chocolate) pudding

Cooking Instructions:

Bake cake -- in a sheet cake pan -- according to directions on the box. Spread the can of pineapple -- juice and all -- evenly over the cake as soon as it comes out of the oven.

Allow the cake to cool to room temperature. Prepare pudding and spread evenly over the cake. Lastly, spread entire carton of cool whip over the cake and immediately refrigerate the cake.

Keep cake refrigerated until serving. Serve cake cold.

Memorable Moment:

This cake is really popular with my family because it is cool and light ... and not at all "rich".  It is great with a glass of cold milk. A real hit, every time I have ever taken this to any kind of pot luck or covered dish meal. I always take home an empty pan afterward. It is easy to make and you can make it ahead of time.
