Leftovers Chicken Gnocchi Soup - Jamie and Joy from Arkansas


Prep Time: 5 minutes
Total Time: 20 minutes
Servings: 4

Ingredients:

(2) 32 oz containers of Swanson 99% Fat Free (No MSG Added) chicken broth
4 boneless, skinless chicken breasts
1.1 pound package of colavita gnocchi (potato)
1.5 cups of organic baby spinach, pre-washed

Note: Sam's Club has the 3, 1.1 pound packages in one box. Use a low sodium chicken broth or leftover chicken stock in place of Swanson's, if desired.

Cooking Instructions:

Pour chicken stock/broth into large skillet. Tear up chicken breast, and place into broth. Add Gnocchi to broth. Bring to boil and turn to simmer, and cover. Leave for 20 minutes, on simmer. Add spinach, then remove from heat.

Cover and serve when desired.

Memorable Moment:

We've gutted our home and the three of us need to live in our 600 sq ft office in our back yard for now. It's been 5 months. We have a 7 x 7 bathroom. We've just gotten a kitchen sink. With no oven or stove, we decided to buy an electric skillet. Our meals are either fast food or they're microwavable. We're wanting to eat healthier, now that my husband is joining the police force and we're wanting to have a baby someday soon. So, we're thrilled to find healthier recipes. This was Thanksgiving leftovers!
