Teresa's Sweet Potato Casserole - Andy from North Carolina

Ingredients:
Casserole
1/2 cup butter
1/2 cup sugar
1/2 cuplight corn syrup
1Tbsp vanilla
2 eggs
4 large sweet potatoes
Topping
1/3 cup butter, cut into small pieces
1/2 cup flour
1/2 cup brown sugar
1/2 cup crushed pecans
1/2 cup shredded coconut

Cooking Instructions:
Preheat oven to 350 degrees (F).
Shred sweet potatoes and microwave on high for 5 minutes. Add all ingredients for casserole - mix well. Put in greased dish.
Use a food processor or blender to blend ingredients for the topping. Sprinkle on top of potato mixture. Bake for 25 minutes.

Memorable Moment:
This is the most amazing way to eat sweet potatoes. It's not low-calorie, but it is high comfort food. One time when my kids were young, they were a little intimidated about eating sweet potato casserole. After we served it twice as leftovers, they held out to avoid it. I surprised them when I said "no one leaves the table until they eat the casserole or they put their hands in it and squish it around." They had the greatest time and 15 years later bring up that holiday memory.
