Dixie Peas - Pat from West Virginia

Total Time: 25 minutes
Servings: 5

Ingredients:

3 tbsp butter
1/3 cup chopped onion
1 1/2 cups thinly sliced celery
10 oz package frozen green peas
2 tbsp hot water
3/4 tsp salt
dash of pepper
dash of thyme
1/2 tsp worcestershire sauce
2 tbsp diced pimento (optional)
1 tbsp chopped parsley

Cooking Instructions:

Melt butter in saucepan, add onion and celery, and saute slowly about 5 minutes, or till onion is golden brown. Add the peas; then stir in water, salt, pepper and thyme. Cover and simmer over medium heat 6 to 8 minutes, or till peas are just tender (DO NOT OVERCOOK). Add worcestershire sauce, pimento, and parsley, mixing lightly.

Wrap in foil and refrigerate until ready to cook.

Memorable Moment:

I got this recipe from my Home Economics book when I was in high school in 1969. It has become a holiday tradition to make this dish for our Christmas dinner. It is a pretty, colorful dish; and it is delicious. Simple and quick to make.
